The Kii Factory is located in Ngairiama in the Kirinyaga District of the Central Province. After hand picking, the cherries are de-pulped, washed and stored for 24h in fermentation tanks. Then they are washed again and spend another 12-24h in a 2nd fermentation tank. Another washing process, during which the last remnants of the pulp are removed, is followed by 24h in so-called "soaking tanks" in fresh water. After drying, the peaberries are sorted out. This elaborate process supports the high complexity and the typical fruity notes for which Kenyan coffees are so famous.
